About Aviation Food Safety Course:

The Aviation food safety training course is a one-day concentrated class, which was designed for all foodservice managers on the ground, but has been modified for all aviation employees. The English food safety training class is approximately 11 hours, which includes the testing.

The one-day training class is accelerated information on all of the most important food safety topics from several food safety textbooks. The aviation student will be provided with a food safety book to read, but the class will also be taught from information concerning other reliable sources, including information from the CDC (Center for Disease Control) and examples of various foodborne outbreaks in our country.

Food Safety books that will be alternated in the classes are the following:

Health Guard:  National Sanitation Foundation
ServSafe:  National Restaurant Association

Even though there are no current requirements to be certified in food safety in the aviation industry, certification tests will be conducted at the end of each training session, which are good for 5-years throughout the United States & world wide before recertification.

The certification tests will be alternated in various aviation food safety classes to endorse all views of food safety questions from different testing companies. The two different food safety certification tests will either be indorsed by The National Registry of Food Safety Professionals or The National Restaurant Association, which are both located in the United States.

Food Safety Course in other languages:

Spanish, Korean, and Chinese aviation food safety training classes are also offered in Atlanta and will always be 2-day concentrated classes because of team-teaching with translators. All translators are degreed and have also earned food safety certifications. All immigrant aviation food safety training classes will be taught with foreign language food safety books, translated study materials in each language, and foreign language tests. All immigrant information is the same as taught in the English curriculum.

Aviation students will learn and be trained and tested in the following food safety topics:

  • Purchasing & receiving safe food for an aircraft.
  • The flow of food from the catering kitchen or restaurant to the cabin of a business aircraft and prevention of pathogen build-up along the way.
  • Basic concepts & what causes foodborne illness.
  • Microbial contaminants in all foods.
  • Which foods are potentially hazardous?
  • Food Allergens.
  • Personal hygiene on the ground or in the sky.
  • Protecting food during storage & takeoff.
  • Protecting food during preparation.
  • Time and temperature control during storage and preparation in the aircraft.
  • Different types of thermometers & which is the best type to use in the galley an aircraft.
  • Protecting food during service.
  • Sanitation in the aircraft.

After the completion of the food safety class, the students will be tested. The tests are always multiple- choice and there are usually 90 questions. The student must score 75% in order to pass the exam.
